Essential fatty acids (EFA's) are part of every cell in our bodies where they play important

which affect every function in our body.
Lignins, while technically not essential, must still come from our diet. Lignin is an insoluble
fiber which our bodies convert to several kinds of lignans. The lignans formed from flax oil are
"pseudo estrogens" that block estrogen receptors in the body. The molecular shape of lignans
are such that they bind with the estrogen receptors in the body, thus smoothing out the hormonal
and metabolic effect of estrogen released in the body. A potent cancer-causing hormone,
estrogen can, when over-produced, stimulate colon and other forms of cancer. It is also significant
to note that the rates of colon cancer tend to correlate with those of breast cancer, and that both
seem to be high in people with low-fiber diets. The presence of lignans, derived from plant fiber,
may be one of the main reasons why vegetarians have substantially lower cancer rates than meat eaters.
The Modern Diet and LNA Deficiency
In the past 100 years, modern food processing developments have drastically reduced the nutrient
value, including the LNA content, of most of the foods we eat. Not only do Americans get vastly
insufficient amounts of beneficial LNA, most of the oils that are consumed are highly saturated
and/or heat altered "trans-fatty acids." Studies have shown trans-fats to be far worse health risks
than even saturated fats. What are the products most responsible for the estimated 12 grams (.43 ounces)
of trans-fatty acids Americans consume every day? The main culprits are deep-fried foods (french fries,
onion rings, etc.), margarines, shortenings, and shortening oils, all made from partially-hydrogenated
vegetable oils. Consequently, Americans suffer some of the highest rates of degenerative processes in
the world, like heart attacks, cancer, arthritis, stroke, kidney impairment, liver disease, autoimmune
disorders, and skin disorders.
